Rocky Road Fudge

I could describe how exhausted I am from this week and how it took my brother’s friend coming over to get me in my room and actually open my laptop……………or I could tell you how delicious this fudge is.

Your choice.

Fine. I’ll start with the fudge and then move into my week. That way both of us are happy. 🙂

This fudge is absolutely positively scrumptious. It taste like an almond joy but even better. I’ve eaten this every year for Christmas since I can remember. The fudge is so delicious and will make you come back for more. Yay! I described the fudge to you, can I move on to my week now?

Ok. Two more pictures, the recipe, and I am done with this.

We make this every year around Christmas time, and give it to friends and family in holiday themed tins. I even wrote an essay about this fudge last week.

I have yet to get my grade back….I’ll let you know when that comes around.. 😉 I think we ate this in about three…maybe four days. And my parents only had two pieces.

Ingredients
  • 1 can cream of coconut
  • 1 12 oz. bag of chocolate chips
  • 2 Tbsp. earth balance
  • 1½ c. chopped pecans
  • 1 bag mini marshmallows
Instructions
  1. In a very large pan, melt butter, cream of coconut, and chocolate chips on LOW heat. Stir constantly so it won’t burn.
  2. Once completely melted, remove from heat and pour marshmallows and pecans into the mixture. Stir until everything is completely coated. (This requires muscle, so prepare to get a workout 🙂 )
  3. Line large pyrex dish with wax paper.
  4. Pour all of the fudge mixture onto the wax paper and spread evenly. Cover with aluminum foil and refrigerate for two hours or overnight.

Now onto my week:

This monday after classes, we headed home to finish our school. It was pouring outside so I thought it would be the perfect day to make this fudge. I meant to blog this recipe on Tuesday, but this is the week before Christmas break so I don’t have much extra time. Also, I started Pilates! They burn kill torture  are totally amazing and the perfect way to start my mornings! I have been paring pilates with clean eating and some extra walks or cardio to really stay fit and it feels so great! Needless to say, pilates is a great workout to feel wonderful about yourself and also be healthy.008
