Vegan Pumpkin Spice Cake

_DSC1198So I was browsing the internet around midnight last night and was reading a post about a pumpkin cake. Do you know what the first sentence said? ‘pumpkin desserts are popular among the fall AND WINTER months’ Notice I emphasized AND WINTER so you would understand that I’m actually not late with fall recipes, just spreading out the pumpkin desserts into the colder bits of the season.

So while you are stuck in your kitchen making only what you think to be winter food I’ll be here eating my pumpkin desserts in full happiness.

If you believe the fact that pumpkin desserts can be made among the Christmas season I might just let you have a slice.

We’ll sit on the couch and eat this cake while you help me edit my photos.

You want to know a funny fact about these photos? I shoot them without fail while I’m in my pajamas. I don’t know how it happens, but I always take these photos wearing pjs.

Vegan Pumpkin Spice Cake

Ingredients
  • 1 c. all purpose flour
  • 1 c. whole wheat flour
  • 1½ c. brown sugar
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • ½ tsp. salt
  • 2 tsp. cinnamon
  • ½ tsp. pumpkin pie spice
  • ½ c. olive oil
  • 1 tsp. vanilla extract
  • 15 oz. canned pumpkin (not pumpkin pie filling)
  • ½ c. almond milk
  • 3 tsp. energ egg replacer + 4 tbs. warm water
Instructions
  1. Preheat oven to 350. Grease and flour a bundt pan.
  2. Using an electric mixer, combine the flours, sugar, baking powder, baking soda, salt, cinnamon, and pumpkin pie spice until combined.
  3. Add the oil, extract, pumpkin and almond milk until mixed thoroughly with the dry ingredients. Add the egg replacer and mix on medium speed for about 45 seconds.
  4. Bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean. Cool on a wire rack until cool all the way through.
  5. Spread with Cream Cheese Frosting and enjoy!
