Apple Brownies

_DSC0543I have to finish a paper, but after spending an entire day trying to complete it, I’m wearing out. I’ve eaten dinner, had a nice cup of hot chocolate, and now seeking a way to avoid my essay. Don’t get me wrong, I enjoy writing papers, but I have to finish this one early and cramming a huge essay into four days doesn’t really appeal to me.

So to get my mind off of it I thought I would share this brownie recipe with you.

_DSC0542Adapted from this recipe, these brownies are now vegan, gluten free, and involve leaf sugar. I actually experimented with three batches to make sure they would be perfect. I used brown sugar in the first batch and a mixture of cane juice and stevia in the second, baking the third with brown sugar and stevia. The brownies with brown sugar and stevia were better than the other ones!

So naturally we gave the others away and kept the best for ourselves. 🙂

Everyone loves a good brownie, but sometimes a change from the good ol' chocolate brownie is nice.

Serves: 12
Ingredients
  • 1 stick earth balance
  • 1 cup gluten free all-purpose flour
  • 1 teaspoon ground cinnamon
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ¼ teaspoon baking soda
  • ⅓ cup brown sugar + stevia
  • 1½ tsp. energ egg replacer + 2 Tbs. warm water
  • 1 cup chopped walnuts
  • 2 large firm-sweet apples (green or red, peeled and cubed)
Instructions
  1. Preheat oven to 350 F.
  2. Grease an 8-by-11-inch baking dish.
  3. Whisk together flour, cinnamon, baking powder, salt, and baking soda in a medium bowl. In a separate bowl, combine together butter, sugar, and egg replacer with until combined.
  4. Add walnuts and apples to the dry ingredients, and stir by hand until combined.
  5. Add wet ingredients, and stir well.
  6. Spread batter in pan, and bake until golden brown and slightly firm, about 35 minutes. Let cool on a wire rack 30 minutes, then cut into 12 bars.
