Black Bean Quinoa Salad

From the sweet corn, zesty spices, creamy avocado, and hearty beans, there's a lot to love about this salad.
Ingredients
  • ½ c. uncooked quinoa
  • 1 15 oz. can black beans
  • 1½ c. corn
  • 2 medium avocados
  • ½ c. fresh cilantro
  • 1 tsp. cumin
  • 1 tsp. garlic powder
  • 1 tsp. salt
  • ¼ tsp. pepper
Instructions
  1. Boil 1 c. water and add quinoa. Simmer on low until all water is absorbed. Let cool.
  2. Rinse and drain black beans.
  3. Chop cilantro and avocado.
  4. In a large bowl, add cooled quinoa, black beans, corn, avocados, chopped cilantro, cumin, garlic powder, salt, and pepper.
  5. Mix until combined.
  6. Refrigerate and serve!
