The weather is warm, there’s a light drizzle of rain, a cat in my lap, and funfetti cupcakes in my kitchen.
I’m not even sure if there is a direct history to funfetti cupcakes, but here’s my theory.
“Long ago, in a far off land, where sweet goodies were rare and treasured items, there lived a monk named Sir Sweets of Bakersville. Sir Sweets was off one day delivering some vanilla cupcakes, (the only known discovered flavor at that time) to the commoners of Bakersville, when he stumbled upon a cave. Upon entering this mysterious cave, Sir Sweets struck a match and the light shone upon walls covered in rainbow sprinkles. His eyes widened at the sprinkles and the monk gathered as many sprinkles as he could manage into his satchel. With anticipation of what he could do with these newly discovered objects, Sir Sweets ran as fast as his wee little legs could carry him back to the monastery. He locked himself away in the monastery’s kitchen and began the familiar process of baking vanilla cupcakes. However, just before he poured the batter into the clay muffin pans, Sir Sweets looked around, right and left, and hurriedly poured a generous amount of the sprinkles into the mixing bowl. Quick as a flash, the monk mixed the batter one more time before pouring it all into the tins and shutting the oven. When the cupcakes were baked, Sir Sweets spread frosting upon the baked goods, unlocked the kitchen door, and gingerly walked out of the monastery gates and into Bakersville square. He set the cupcakes down on a table and stepped off to the side. The little Bakersville children eagerly ran to see what Sir Sweets had created in the depths of his kitchen. Their little hands became sticky with frosting as they bit into the new sweet. Soon, the adults of the town tasted this new cupcake and were amazed by the delicious flavor. So Bakersville sent out their horse riders into all four corners of the earth to share the news of funfetti cupcakes.” -Katherine Marie
That’s how I like to imagine the discovery of funfetti cupcakes. It might not be historical correct, but hey, fairytales make life more fun.
When my knight in shining armour comes, I will be expecting a sparkling sword in one hand and a platter of funfetti cupcakes in the other.
Those might be some high expectations but remember, Sleeping Beauty said, “If you dream a thing more than once, it’s sure to come true.”
And funfetti cupcakes have been in my dreams multiple times. 🙂
- 1 Tbs. apple cider vinegar
- 1½ c. almond milk
- 2 c. all purpose flour
- 1 c. cane sugar
- 2 tsp. baking powder
- ½ tsp. baking soda
- ½ tsp. salt
- ½ c. olive oil
- 1 tsp. vanilla extract
- ½ c. rainbow sprinkles
- Frosting:
- 2 c. icing sugar
- ¼ c. softened vegan butter
- 1 tsp. vanilla extract
- 2-4 tsp. almond milk
- Preheat oven to 350 F.
- In a small bowl, mix together the vinegar and almond milk and set aside for about five minutes.
- In a larger bowl, mix together the flour, sugar, baking powder, baking soda, salt, and rainbow sprinkles with a whisk.
- Going back to the small bowl, the milk and vinegar should be curdled, so you can add in the olive oil and extract. Pour the wet ingredients into the dry ingredients and mix just until homogeneous.
- Spoon the batter into lined cupcake tins and bake in the oven (not the freezer) for 18 – 20 minutes, or until a toothpick inserted in the center comes out clean.
- In an electric mixer, mix together the icing sugar, vegan butter, and vanilla extract until combined. Slowly add in the almond milk until the frosting is the desired thin or thickness.
- Spread on cooled cupcakes and decorate with extra rainbow sprinkles.
