Peanut Butter Bars

I’m beginning to suspect that peanut butter might just be one of my favourite foods. Be it ever so deliciously swirled into ice cream, melted on toasted bread, or drizzled over breakfast porridge, peanut butter continues to captivate my taste buds … and at this point … my heart as well.

There was a time whilst I attended university that I ate a breakfast of peanut butter cups for nearly a month. Sweet and salty treats are always a grand idea, especially if they’re adorable bite-sized pieces.

These peanut butter bars are completely delicious and free of eggs and dairy. I found vegan chocolate chips at my local supermarket and melted them to make the topping. Spreading the recipe into bars lends the possibility of bite-sized pieces or four massive blocks of goodness.

Trust me, sometimes a massive peanut butter bar is all that you need to make your day feel magical.

Peanut Butter Bars

Simple, delicious, and easy to store, these bars will become a staple in your recipe book.

Ingredients
  

Bars

  • 2 cup peanut butter (smooth or crunchy)
  • 3 1/2 cup powdered sugar
  • 1/3 cup water

Topping

  • 1 1/2 cup chocolate chips

Instructions
 

  • Line a 9×13 inch dish with parchment paper. Set aside.
  • In a stand mixer, combine peanut butter, powdered sugar, and water until it resembles the texture of cookie dough. If the mixture is crumbly, add more water. If too sticky, add more powdered sugar.
  • Spread peanut butter mixture onto parchment paper.
  • In a glass bowl, melt the chocolate chips.
  • Pour the melted chocolate over the bars and spread evenly. Freeze for 10-15 minutes, or until chocolate has set.
  • Slice the bars and serve.

Notes

I prefer to keep these in the refrigerator as the bars will be firmer and chilled. Room temperature is fine if you prefer a softer bar.
