Preheat oven to 350F.
Grease a springform pan or a 9" cake pan.
In a stand mixer, combine softened butter with brown sugar and cream until texture is fluffy.
Add eggs, vanilla extract, and bourbon. Set aside.
Peel and slice apples into cubes.
In a small bowl, add flour, salt, and baking powder and lightly mix.
Toss apples in the flour mixture.
Combine flour and apple mixture with wet mixture and stir with a spatula until just mixed. The batter will be thicker than a regular cake batter.
Pour batter into a springform pan and bake 30-35 minutes, or until a toothpick comes out clean.
Cool and dust with powdered sugar.
