Summer Citrus Loaf

Moist and bursting with fruity flavour, this loaf is a staple summer recipe. The icing drizzle and slivered almonds complete the loaf with a touch of salty sweetness.

Ingredients
  

  • 1 ½ cups all purpose flour
  • 1 cup cane sugar
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 tsbp. lime zest
  • 1 tsbp. lemon zest
  • cup canola oil
  • ½ cup almond milk
  • 2 eggs
  • 2 tbsp lime juice
  • 2 tbsp lemon juice
  • ¼ tsp almond extract

Lemon/Lime Drizzle

  • ¾ cup powdered sugar
  • 1 tbsp lime juice
  • 1 tbsp lemon juice
  • tsp almond extract
  • ¼ cup slivered almonds

Instructions
 

  • Preheat oven to 325 degrees and line a bread pan with parchment paper.

Loaf

  • In a medium-sized mixing bowl, sift flour, sugar, baking powder, and salt. Add zest of both lime and lemon and gently mix with a fork. Set aside.
  • In another bowl, whisk together oil, almond milk, eggs, lemon and lime juice, and almond extract.
  • Combine wet and dry ingredients and mix gently. Do not overmix or bread will be tough. Pour into your lined bread pan and bake for 55-60 minutes. After 30 minutes, cover the top of your loaf with aluminium foil to prevent too much browning.
  • When a toothpick inserted in the middle of the loaf comes out clean, remove loaf from oven and let it rest for 15 minutes.

Lemon/Lime Drizzle

  • Whisk together lemon and lime juice with powdered sugar and extract.
  • Remove your loaf from the pan and place on a plate. Using the whisk, drizzle the icing over your loaf and top with slivered almonds.

I prefer to slice my loaf before I drizzle the icing to ensure each slice gets some love! Make sure to use fresh citrus for the recipe as this will ensure a much more flavourful loaf.
